Extreme Pita was co-founded by brothers Alex
and Mark Rechichi in 1997. It all started
with a dream. The dream to create an
innovative product heaping with nutrition;
one that had variety, zest and the stamina
to hold an unbelievable amount of quality
meats, cheeses, sauces and veggies. Right
from the start their idea was simple … sell
fresh, and healthy food.
Alex and Mark turned to a type of bread that
is highly nutritious, versatile enough to be
used as a wrap (but strong enough to hold
all those goodies!) and tastes really,
really good! One thing was certain, they did
not want their customers to get full on foot
long loaves of bread with very little fresh
toppings in between, so they turned to the
Power of the Pita!
Since the beginning, Extreme Pita has been
one of the most unique and rewarding food
franchises in North America, growing at the
rate of approximately one store per week.

systems and store operations, you have many

you create a new business on your own. We

their success. We will provide you with the
names and phone numbers of our Extreme Pita
franchisees. It is not mandatory for
franchisees to provide you with
figures, but most may be willing to discuss
this information.
Location: Owner Participation
Everyone
knows the importance of a good location in
the retail business. Although the Extreme
Pita has final approval on all locations, we
strongly encourage franchisees to become
involved in the site selection process and
review the data we receive during a site
analysis. Extreme Pita is very interested in
receiving input from franchisees and we
support all knowledge or comments
franchisees have on a location. After a
location has been found, the franchisee will
work closely with Extreme Pita
representatives to make sure the location
meets our required criteria.
Initial Investment & Financing
The total initial investment will depend on
many factors, some of which include: the
physical size and condition of the premises,
extent of renovations, rent, seating and
equipment. An estimate of the total capital
required to open a franchise including the
franchise fee can be found in the Franchise
Disclosure Document (USA) and Disclosure
Document (CAN).
Please note, most stores are 300 to 1,300
square feet in size and may be opened in a
wide variety of building styles, including
strip plazas, food courts and storefront
locations. The ideal size for a traditional
store is 1,200 square feet.
A franchise applicant must have a
satisfactory financial rating and
unencumbered funds equal to at least 35-45%
of the initial investment. But money is not
everything! More importantly, it takes a
special person to become an Extreme Pita
franchisee. You must share the same
entrepreneurial spirit that helped found
Extreme Pita, as well as the desire to
maintain our high standards.
Royalties
The royalties are based on gross sales. An
advertising royalty is paid to The Extreme
Pita Advertising Fund and used towards
marketing the brand. Please see the royalty

Disclosure Document (Canada).
T raining
Preparation and information are critical
factors needed for any business to succeed.
At Extreme Pita we recognize the need to
spend quality time with each and every
franchisee in a controlled environment.
Franchisees undergo an intensive 3 1/2 week
training program. Our training program
involves both classroom and in-store
training from experienced corporate trainers
who have previously operated successful
Extreme Pita restaurants.
Training will commence in a designated
Extreme Pita restaurant, where you will
spend one week learning the basics of our
offering. Following this training, you will
attend 8 days of training with new fellow
franchisees at our Education Center, located
at our headquarters in Mississauga, Ontario,
Canada. As part of this training program we
teach franchisees what it takes to operate
an efficient and successful Extreme Pita.
During this time we will train you in every
aspect of the business, including building
the sandwich, controlling food and labor
costs, scheduling and ordering, management
control systems and recruiting and training
of your new staff.
In addition, our restaurant openers will
come to your restaurant during your first
week of business to help you successfully
open your restaurant.
Franchise Support – “Our Success Is
Ultimately Dependent On Yours.”
Extreme Pita is organized into two major
groups – Franchise Development Department
and Operations and Franchisee Support
Department. The first group is focused on
growing the chain through marketing and
recruiting qualified franchisees, while the
second is dedicated solely to supporting and
training franchisees. This structure allows
Extreme Pita to equally concentrate on
growing the system, while at the same time
building a strong group of individual and
multi-unit franchise restaurants.
Extreme Pita’s dedication does not end when
you first open the doors to your new
business –far from it. You will immediately
be introduced to the people who will assist
you in the long term. Ongoing support is
provided via regular site visits by your
designated Business Development Consultant.
We also utilize FYI’s and newsletters and
technology to discuss updates and the
implementation of common practices among
franchisees regarding operations and
advertising.
A Business Development Consultant will be
dedicated to answering your questions and
helping you within your store. These highly
skilled professionals will become an
important part of your marketing effort;
they will give you operational suggestions,
as well as opportunities and ideas to
promote your business.

Marketing
& Product Development
Word-of-Mouth is possibly one of the most
effective forms of advertising, and this is
often what keeps the customers coming time
and time again, but it is not meant to stand
alone. In order to create a strong powerful
brand, Extreme Pita works with you to
establish a variety of advertising
techniques to ensure the Extreme Pita name
and brand reaches all of your potential
customers, building awareness and
reinforcing the benefits of our products and
services. We make efforts to spread our
brand across various advertising mediums. We
do so through implementing in-store
promotions, coupon placements, press
releases, outdoor advertisements such as
transit ads and billboards, radio
commercials and other media vehicles. Our
goal is to have ads targeted to increase
store sales year after year.
Our menu assists in attracting a wide
demographic profile. The menu is a
collaboration of many different pita
sandwiches, each freshly made to customer
specifications. Whether a customer chooses a
vegetarian or meat selection, our pitas are
made with the healthiest ingredients. These
include over 10 vegetable toppings, 3
cheeses and various gourmet spreads and
sauces. Along with our healthy and great
tasting pitas, the Extreme Pita offers its
customers an exciting and well balanced
menu.
All of the fresh vegetable toppings used in
our pitas are also used to prepare gourmet
flat baked pita pizzas, fresh salads and
catering trays. Our product development team
works diligently at introducing 3 to 4 new
taste profiles per year using Limited Time
Offer promotions, keeping things fresh and
new for our regular customer base.
To consistently attract and expand the
customer base, we offer a marketing support
system that ties in with regional marketing
programs. These programs are designed to
strengthen and reinforce customer
recognition and branding of the Extreme Pita
name within the restaurant’s trade area.
Franchisees are also expected to work with
their Business Development Consultant to
develop local store marketing initiatives.
By utilizing the Extreme Pita local store
Marketing Manual and implementing the
techniques set out in the manual, you will
continue to increase traffic, visits and
awareness of your restaurant within a 3 mile
radius of the restaurant.
